Aquarium, mini-vacation, and adventures in cooking

In case you couldn't tell, there are three things in this post.
#1  Another trip to the aquarium!  Collin and I went with two of my friends and their kids.  We all have season passes, so we decided to go.  Collin was good for the most part.  I think he was getting a little sleepy.  Here's some pictures:

All of the kids checking out the "nemo" fish.

Collin trying to check out the snake.
I think this was Collin's favorite exhibit.  He kept wanting to come back to it.

Collin throwing a "tantrum" because he wanted to go back to the exhibit above, but we were going to see the otters.  He just sat down.  No crying or screaming.

The kids playing on the frog.

The aquarium gave away free otter pops to celebrate having an otter exhibit.

#2 - We went on a mini-vacation.  Originally we were planning on heading to Arizona sometime in late January/ early February, but Greg was too busy at work to take any time off.  So we went to north Layton to stay in a hotel.  We made sure it had a pool, because Collin LOVES to swim!  We really didn't do much besides swim.  We took a drive up the Ogden Canyon to see the snow, but forgot Collin's coat, so we couldn't get out and play.  Here's some pictures:

At a company party, Collin borrowed some arm-floaties and he loved the freedom.  We bought some after that.  What a great purchase!  He loves them!

Collin was kicking and moving his arms.  I think we've got a swimmer.
Collin and Becca playing in the water.

Another picture of him swimming.  (Don't worry.  Becca was right there next to him; we just cropped her out of the pic.)
And finally #3 - I (Becca) had two adventures in cooking after we got back from our min-vaca.  The first was a turkey.  We'd bought a small turkey breast to have for Sunday dinner, and my math skills failed me.  I thought the turkey had been in for two and a half hours, but it had only been in one and a half.  I had all the other dinner items prepared when we realized it.  So I put the turkey back in the oven, and we ate all the sides for dinner.  Then after another hour, I pulled it out.  Greg began slicing it, but wasn't sure it was done.  I tasted it and, yep, not done!  Since we wouldn't eat it undercooked, I decided to turn the oven temp down and put it back in for a while.  Then I forgot about it.  When I went to get Collin his bed time snack, 2 hours later, I saw the oven was on and remembered that the turkey was still in the oven.  Greg laughed and took a picture.

I saved a little bit for leftover dinner the next day.  We just trimmed off the burnt parts.  It wasn't that bad.

My second cooking adventure:  I had been wanting to make Greg some breakfast sandwiches because he doesn't eat breakfast.  I found this pin on Pinterest.  (LOVE that site by the way!)  A few weeks ago, I tried them on a Saturday morning the way the pin said to.  I couldn't get enough filling in them though, so I decided to make them more like hot pockets.  I rolled out the crescents and then used my pizza cutter to cut it into 8 squares.  Then I spooned my egg, sausage, cheese mixture onto one side of the square.  Next I folded the other side over the filling and pinched the opening.   Finally I tucked the sides under and pinched them closed as well.  Before baking I poked holes in the top with a fork.

After letting them cool, I flash-froze them for 15 minutes.  Then I wrapped them in plastic wrap and placed them (5 at a time) into freezer bags.  Now Greg just takes one out and microwaves it for 2 minutes and he's good to go!

January

Goodness, I'm no good at blogging in January.  Not much happens, and maybe that's why.  So far this season, it's only snowed twice here in Utah.  Neither really stuck/stayed (at least where we are).  Collin loves the snow.  He gets excited when we show it to him outside.  And both times it snowed, I took him outside in his boots and he stomped around in the snow and puddles and had a grand time!  I hope we get some soon so that we can go sledding and make a snowman.    Collin's latest love is Dora the Explorer.  We bought a DVD of Dora almost a year ago when we went to New Mexico.  He hadn't been interested in watching it until just recently.  At first he would ask for "Mona", but just today he's starting saying "Dora".  Here's some pictures that we've taken since Christmas:

Collin loves his stickers.  He decided to decorate Greg's face... hehehe!
I asked him to smile, and this is what I got.  Which is much better than usual.  Usually he doesn't even bother to listen!
I'm glad I looked for pictures to add because I totally forgot we went the aquarium!  The Monday after New Years Greg had off, so we wanted to do something and decided to go to the Living Planet Aquarium.  Collin was very entertained; I'm glad we went with season passes.  Here's some pictures from that:

Checking out some trout (I think...)

A jelly fish.

A stingray tried to jump out of the pool.  Both of us were amazed!

Collin watching the large fish in the South America room.

Trying to decide if he wants to crawl in the tunnel.

Collin loved all the interactive learning boards.

Penguins!

This penguin swam right up to where we were!

Collin getting a better view of the penguins.

We found this place last.  They had books and a puzzle.  Collin LOVES puzzles.
